Paris Tea is amazing

Harney and Son's Paris Tea is really special and we just got some back in stock. It's a floral black tea with vanilla and bergamot notes. It has a nice delicate quality. Imagine wandering through a giant secret field of flowers while smoking a pipe full of rich sweet tobacco during your 5 week vacation. That's what it reminds me of and you can share the same feeling while sitting at your cubicle at work or riding the subway. We serve it both by the cup, and by the package in sachets so come enjoy some when you get a chance! Good iced, but particularly good hot with a little sugar or simple syrup.

What is 100% White Tea?

100% White Tea comes from the tender, white downy buds of the Camellia sinensis bushes from China’s Fujian Province.

Each bud is hand-plucked only a few days of the year, right before the leaf opens. 100% White Tea is minimally processed resulting in a cup with a delicate, faintly sweet flavor and a lingering finish.

Caffeine

Steeping is Easy

    • Fill the kettle with fresh, filtered water and heat just short of boiling.
    • Steep tea for 30-60 seconds if using tea bags or 2-3 minutes if using full-leaf.
    • For iced tea, double the amount of tea bags used, steep as above and pour over a generous amount of ice.
    • Experiment to find your favored steeping time and enjoy Sip by Sip.

Taiwanese girl Emily gives our Original Black a big smile

This is Emily from Taiwan. Emily stopped in yesterday eager to try our bubble tea after her friend's high recommendation. We can imagine how she must have felt being so far away from Taiwan, the birth place of bubble tea and not having any readily available at every corner of the street. We made her a cold one with no ice just how she likes it. She was so happy she posed a big smile of satisfaction for us to show off! We thank you for your enthusiasm Emily. I found this cute little booth at the Brooklyn Flea on Saturday ran by James and John from GraphicHug.com. They offered many beautifully designed books, posters and zines from various graphic designers. I love their "I Love You" project online, and I hope one day they will do a project on bubble tea haha! What is Oolong?

Oolong tea begins its transformation from leaf to cup when Camellia sinensis leaves are plucked at their pinnacle of freshness and flavor.

These large leaves are then withered, briefly oxidized, rolled or twisted and fired. The shape of the final tea could be the inspiration for the name Oolong which means “black dragon” in Chinese.

Something Interesting to Consider...
Chinese oolong can be very floral, such as Ti Kuan Yin, which is often described as smelling like orchids. Oolong from Taiwan, known as Formosan Oolong, is oxidized and fired longer and has a fruity flavor reminiscent of ripe peaches.

Oolong teas impart much flavor – the same leaves can be infused multiple times.

Caffeine
Oolong’s caffeine content is between that of black and green tea and produces about one-quarter to one-third the caffeine found in a comparably-sized cup of coffee.

Steeping Oolong tea is Easy

    • Fill the kettle with fresh, filtered water and heat to a rolling boil.
    • Steep tea for 3-5 minutes (if using a tea bag) or 5-7 minutes (if using full-leaf tea) using one teaspoon of tea leaves or one tea bag and 6 oz of heated water per cup.
    • Experiment to find your favored steeping time. Enjoy Sip by Sip
